Is there any setting in Plex that allows me from the server side to force people to watch the video in original quality (without transcoding) and if needed (depending on the device) to only transcode audio? But as others have said, def keep your metadata on the SSD, even Plex Media Server if you can. Using RAMdisk is good but also not really a huge performance boost specifically for plex, over keeping the transcode directory on an SSD.
